Sunny Eggs, Micro Broccoli & Pecorino
Simpler is often better when it comes to food. Start with great ingredients and let them speak for themselves. In this case, it's local farm fresh eggs served over freshly snipped organic micro broccoli, and finished with a wonderful grated Pecorino Romano.
Add a handful of micros to your dish. In this case, we've used broccoli, but really any microgreen would work.
Drizzle with some extra virgin olive oil, sprinkle with sea salt, and give it a few good turns of freshly ground black pepper.
Cook your eggs sunny-side up. We do this by turning on the broiler. Add a pad of butter to a cast-iron pan over medium-high heat. Once melted and bubbling, add your eggs. Lightly season with salt & pepper.Once the edges have begun to set, put the pan in the broiler for about 2 - 3 minutes, or just until whites have set but yolk is still runny.
Lay your beautifully cooked eggs atop the micros and finish with a HEALTHY portion of grated pecorino. Boom! Welcome to your new favorite breakfast.
